Pork Fillets with Bell Peppers

  • 9 oz pork fillets
  • 2 onions
  • 1 clove of garlic
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 tsp canola oil
  • salt and pepper
  • paprika
  • cayenne pepper
  • oregano
  • thyme
  • 4 baby pota­toes

Cut fillets in 1/2 inch thick slices, slice onions and bell peppers. Heat oil in pan, fry fillets from both sides, take them out of the pan and keep them warm. Saute garlic and onions in the frying fat, add bell peppers and cook for about 15 minutes. Season to taste. Add salt and herbs to fillets and put them on top of vegetables. Cook for another 5 minutes. Serve with baby potatoes.
